Blackberry Creams
Description: A creamy layer sandwiched between tangy blackberries --- a real taste bud tempter!
Preparation time: 15 - 20 minutes
Serves: 4
Ingredients: 250g / 9 oz fresh blackberries, rinsed
8 dessertspoons berry fruit coulis
2 tablespoons icing sugar, sieved
400g / 14oz Greek yogurt
150g / 6 oz packet Princess Marshmallows
Preparation:
- Using half the berries, divide between 4 serving glasses, and cover each with 1 dessertspoon fruit coulis.
- Stir the icing sugar into the yogurt, and add the marshmallows, combining until coated.
- Spoon the yogurt mixture over the fruit ensuring an even split between the glasses.
- Top with the remaining blackberries, and fruit coulis.
- Serve immediately or chill for up to 2 hours.
